Holiday Bite-Sized Treats: Ways to Utilize Christmas Remains into NYE Canapes
What types of canapes can I whip up for New Year’s Eve using my Christmas leftovers that will still seem festive?
Party snacks doesn't have to be elaborate, so New Year's presents a great chance to use up what's left. The key rule is to stick to items to just one bite—guests don't want to handle a fork. People just want a big hug of comfort food with a decadent twist.
Should you possess a bit of cured fish left, layer it on mini pancakes and top it with lumpfish caviar. Small patties are also just the ticket: If you have leftover smoked haddock or hot smoked salmon, fold it through creamy potatoes, blend with fresh herbs, citrus, and fried leeks, then coat in Japanese breadcrumbs and fry until golden.
You could also have a ball with croquetas. Prepare the white sauce up to days ahead, then use leftover ham, poultry, or mushrooms for the interior. Blitz old bread into breadcrumbs to cover them, then cook until crisp. Sausage roll mixtures are another perfect use for those breadcrumbs, or use them as a coating for bite-sized chicken. For flavour, all you need a bit of citrus zest and aromatic herbs, and they'll taste so much more. As an aside, croissants make excellent coatings, too.
One favourite thing at this time of year is a post-holiday sandwich, and that can continue after Boxing Day. Place some ham and turkey in an airtight container and freeze. While you're at it, reserve some cranberry sauce and sweet glaze in the refrigerator. When needed, defrost the meat, then pop it in a hot oven with the reserved glaze for a short time. Let it cool and slice thinly, then arrange on top of some artisan bread and assemble sandwiches with lots of cranberry sauce. Cut into small squares for a winner.
Remaining poultry, meanwhile, could be turned into a spicy, crisp salad. There’s always a bit of turkey leg left over, and it's ideal for something punchy. Pull the meat, then fry it slowly in a pan, and mix with leftover cranberry sauce thinned with lime juice, a spoonful of soy and a little chilli oil. Finish with chopped herbs and some sliced spring onion, and present in small lettuce cups.
Revamping Remaining Veg
Vegetables, meanwhile, can be scrubbed up and ready to party with a big batch of fried potato cake. Combine all your leftover veg with herbs, then add salt and pepper and add a binding agent. Stamp out portions to about the size of blinis, then store in the freezer. Reheat in a hot oven for a short time and top with your choice of topping—perhaps sliced beef and grated horseradish. A word to the wise, though: save a stash for a late breakfast the next day.
